Cozy Cabin Baked Bannock
You can now take the warm baked bannock recipe with you anywhere you go!
Ingredients
3 cups ....................................all purpose flour
3 teaspoons ..........................baking powder
2 tablespoons .......................granulated white sugar
½ teaspoon ...........................table salt
1/4 cup................................... shortening
1 cup ...................................... milk
1. In a large bowl, mix all dry ingredients well.
2. Cut up shortening and butter into small pieces and then mix well with flour mixture.
3. Make a well in the combined mixture and add in milk.
4. Bring the dough together on a well floured surface.
5. Bake at 375 degrees, for 20 to 25 minutes. The bannock is ready when it is nice and golden brown.
Serve with butter and jam!
Northern Fish Chowder
Enjoy a taste of the north from your very own kitchen!
Ingredients:
2 tbsp ............................Olive Oil
1 cup .............................White Onion, finely chopped
1 cup .............................Carrots, finely chopped
1 cup ..............................Celery, finely chopped
1 cup ..............................Frozen corn kernels (peaches and cream flavour)
Seasonings ................... Salt, pepper, tarragon
1-2 litres ........................ 35% Real Whip Cream
3 fillets ........................ Freshest fish available, cubed
1. In a large pot with olive oil, sweat the onions until translucent.
2. Add all vegetables to the same pot and sauté for ~30-40 minutes. Season generously with salt, pepper and tarragon.
3. Once the vegetables are soft, add in the whip cream with a sprinkle of fresh nutmeg. Next add in the fresh fish. Cook on medium heat until fish is cooked.
Serve with our Baked Bannock and enjoy the taste of the cozy cabin!
*This recipe is made in a much larger batch for our Cozy Cabin Aurora tour groups, and we have tried to estimate the quantities for a smaller home batch. Please allow for some flexibility with the measurements of cream and fish to suite your taste.
